You thought I forgot about the newsletter ?
Well, not really.
I have been a bit more busy in the kitchen (less laptop time) and it took a little longer to finalize this month's special.
I underestimated how different it is to find the right balance with taste and texture with croissant dough versus a tart shell.
But we managed and this is the result for this month :
a rhubarbe croissant !
Perfect for the season, the fragrant rhubarb give a nice tang, while the shiso cream brings a softer flavor to balance out the tasting experience. We also made a veil with rhubarb juice to give a more modern look to this croissant.
It is a available this month of May, on display and pre-order, every Fridays and Saturdays.
We also started to work on next month's special, and it will be very inclusive. If you've read the March newsletter, and know which fruit will be in season in June, you can start to have an idea about what I am talking about (you can find it here).
