Is it me or January laster longer than the usual ?
It feels like forever ago that I last wrote the newsletter,
the grey and dark days made it harder to keep track of time,
every day in the shop looked similar, but you guys were always here to remind us what a Saturday crowd was !
We are halfway through winter now, the last few sunny days reminded us of what is ahead and it inspired this month's special.
For this Valentine's dessert, we wanted it fresh and floral,
and we even made it gluten-free !
In the breton shell, we disposed a crémeux infused with dried camomile, added some pieces of blood orange.
We then pipe a cream cheese chantilly as "petals",
and fill up the middle with a grapefruit gel.
To finish the flower motif, we sparkle some bee pollen powder.
Anything you need to celebrate Valentine's day (or just for fun)
It will be only available in individual sizes,
on Fridays and Saturdays, from Feb 7th until March 1st.
