This tart is composed with a frangipane baked with some rhubarb pieces. On top of it, you will find pieces of poached rhubarb and rhubarb gel. It is all covered with a crème anglaise infused with shiso, then whipped with cream cheese.
Ingredient list: Flour, sugar, salt, butter, eggs, almond powder, cream, rhubarb, gellan, cream, shiso, gelatin, cream cheese, mascarpone.
Allergens: Gluten, nuts, dairy, eggs.
