This year Valentine's dessert is fresh, floral and gluten-free. In the breton shell, we disposed a crémeux infused with camomile, and some pieces of blood orange. We pipe a cream cheese chantilly as petals, and fill up the middle with a grapefruit gel. To finish the flower motif, we sparkle some bee pollen powder. Anything you need to celebrate Valentine's day (or just for fun)
